A BUZZ-WORTHY BEE’S KNEES COCKTAIL RECIPE

The Bee’s Knees is a roaring ‘20s classic with a sting of sophistication. Possibly created in 1921 by Frank Meier, head bartender at the Ritz, Paris, a 1929 newspaper reckons an American socialite, Margaret Brown, might have had a finger or two in its creation. Either way, it’s a crowd-pleaser that’s earned its rep.
- 60ml gin - the spirit that keeps things honest
- 30ml honey, straight or loosened-up 1:1 with warm water or simple syrup (a 1:1 ratio of granulated sugar dissolved in an equal volume of water)
- 30ml fresh lemon juice (or try orange juice for less of a sting)
- Optional curveball: The addition of 2 dashes (0.92ml - 1.25ml) absinthe and 2 dashes orange bitters make a variation called the Oldest Living Confederate Widow. Try ordering that one in a bar…
- Combine in a cocktail shaker.
- Shake and strain into a chilled cocktail glass.
- Garnish with lemon peel (or get fancy with a sprig of basil or thyme).

- 50ml Settler Premium Gin (available to buy online in 375ml and 750ml flasks)
- 20ml fresh orange juice
- 2 teaspoons runny Greytown honey (the latest selections are available here)
- 20ml fresh lemon juice
- Add the honey to the gin in a cocktail shaker and stir it like you own the joint.
- Add the orange juice, lemon juice and lots of ice.
- Pour into glasses and garnish with orange zest.
