TOM COLLINS COCKTAIL RECIPE - VINTAGE VIBES FROM A FORGOTTEN AGE

The Tom Collins isn’t just a cocktail - it’s a liquid time-slip back to 1882 when Harry Johnson immortalised it in his New and Improved Bartender’s Manual: Or How to Mix Drinks of the Present Style (not a brief book title but the recipe’s simple):
- 60ml Old Tom gin
- 25ml fresh lemon juice
- 15ml simple syrup (a 1:1 ratio of granulated sugar dissolved in an equal volume of water)
- 50ml soda water
- Gently mix the Old Tom gin, fresh lemon juice and simple syrup in a Collins or highball glass with ice.
- Top with soda water.
- Garnish with lemon slice and Maraschino cherry.

- 20ml fresh lemon juice
- 20ml sugar syrup
- Sparkling water
- Shake all ingredients (except the sparkly stuff) in a chilled shaker.
- Strain into a highball glass filled with ice.
- Top up with sparkling water and sip like you invented it.
