From the mid-1800s the Small Farms Association went looking for people willing to break in Wairarapa scrub and turn it into pasture. Very few of them knew quite what they were taking on.
Eucalyptus, fennel and orris root make this the smokiest gin we distil — musky and sooty, and best enjoyed in a shed, near a stove, with someone who has also been outside all day.
